Amá Brings Elevated Mexican Cuisine to Fishtown in 2025

Amá is set to shake up the Philly dining scene in early 2025.

Nestled at the Fishtown-Kensington border, this new eatery promises to deliver an elevated take on seasonal Mexican cuisine.

The restaurant is a passion project of Frankie Ramirez, a self-taught chef from Mexico City, whose culinary journey has been nothing short of inspiring. 

With a résumé that includes kitchens like LMNO, Parc, and Enoteca Tredici, Ramirez is now stepping into the spotlight with his first solo venture.

Located at 101 West Oxford Street, the restaurant’s name, Amá, is a heartwarming and loving nod to mothers, or “mamás” in Spanish. 

Ramirez is teaming up with his wife, Veronica, and seasoned restaurateurs Roberto Medina and Crisalida Mata. 

Medina and Mata, who own popular spots like La Catrina in Media and Agave Mexican Cuisine in Chadds Ford, bring their expertise to this exciting collaboration. Together, they aim to redefine what diners expect from Mexican food in Philadelphia.

The space itself is a blend of old and new, featuring traditional Mexican design elements alongside modern touches. 

BoxWood Architects have crafted a welcoming interior with textured plaster walls, wooden beams, and warm terracotta accents. 

The open kitchen with an impressive eight-foot charcoal and wood-fired grill is a focal point, allowing diners to watch the culinary magic unfold. 

With seating for 120 guests, including 20 at the bar and 12 at a chef’s table, plus room for outdoor dining, Amá is designed to feel intimate yet expansive.

The unique Fishtown restaurant menu is where the heart of Amá shines. Ramirez draws inspiration from Mexico’s six main culinary regions, so you will get to try dishes that feel familiar but innovative. 

Think whole grilled fish, roasted octopus, head-on prawns al carbon, and unique cuts of steak for carne asada. Hand-pressed tortillas, tacos, tostadas, and ceviches will also make an appearance, alongside seasonal vegetarian options and house-made desserts. 

The bar will emphasize craft cocktails, with tequila and mezcal taking center stage, complemented by local beer and wine. 

At first, the restaurant will only be open for dinner, which will give Ramirez and his team the chance to perfect their vision.

Ramirez’s path to this moment started at 16 when he moved from Mexico City to Philadelphia and took his first restaurant job as a dishwasher. 

He worked his way up through the ranks, learning everything he could in kitchens like Bliss, Parc, and LMNO. 

His wife, Veronica, who he met while working at Bliss, has been a key part of his journey and will be deeply involved in Amá, helping to manage the front of the house.

His and his wife’s mothers have inspired dishes and techniques that will be featured on the menu, making Amá deeply personal. 

He wants the experience to feel like a warm welcome to Mexico, where flavors tell a story and every bite feels like home.

As a standout addition to Philly’s new restaurant offerings, Amá aims to bring a new level of sophistication and heart to Fishtown restaurants. 

By leaning on local farmers, honoring old flavors with new hands, and rethinking what Mexican cuisine can be, Ramirez and his team are creating something truly special. 

With its mix of tradition, innovation, and passion, the Amá restaurant is set to be a game-changer in Philadelphia’s famous food scene.
